About

Milos arrived at The Shoppes at Marina Bay Sands in July 2024 as the first Asian branch of the restaurant group founded by Costas Spiliadis in Montreal. The 155-seat room was designed by Alain Carle, with an entrance of Pendelikon marble, a portico modelled on Cycladic windmills, a cane pergola ceiling and an open kitchen beside an iced display of whole fish.

Choose a fish from the market and have it grilled, baked in sea salt or served as sashimi, priced by the kilo. The Milos Special, a tower of paper-thin fried zucchini and eggplant with saganaki and tzatziki, is the house signature. Also order the charcoal-broiled Mediterranean octopus with Santorini fava, the tomato salad with barrel-aged feta and astakomakaronada, an Athenian-style lobster pasta.

This is a place for business entertaining and special occasions, with a wine list that leans heavily on Greek bottles such as Assyrtiko and Xinomavro. Weekday set lunches offer better value. Other branches include Athens, London, New York, Miami, Las Vegas, Dubai and Montreal.
